Madrid is a foodie hub by all means! But beyond the gastro-tapas-paella-ham establishments, the city’s culinary scene–along with its social demography–is undergoing a delicious shift. Immigrants are arriving, bringing recipes, and opening restaurants. Of course, these eateries are hybrids, a product of local ingredients and hopes of success. Perhaps these spots are a celebration of a culture, or even a celebration of memories, more than an effort to authentically (what does that word even mean?) replicate food.
